Mini Pavlova Cake – Simply, Beautiful

When I was living in Turkey where fig can grow and is rather cheap(er than here), I did not really like it. My mother had to force me to eat. When I am living in Finland where fig comes from either Turkey or from Brazil and it is really expensive, I started loving it. Quite idiotic, isn’t it?
When a friend invited me to a picnic, I wanted to bake something easy, filling but light at the same time and something salty this time. So I baked this lovely zucchini pie since I cannot get enough of zucchini this year.
Ever since I baked Rachel Khoo’s savoury cake, I’ve been crazy about making other combinations. I realised that keeping the cake batter the same, you can make many different cakes just changing the other ingredients.
Lemon and butter.. Lemon, and, butter.. LEMON AND BUTTER! Perfect combination for a little cake!
Since April 2013 I’ve been working in Aalto University, Creative Sustainability Master Program (the one I graduated from), as an events coordinator / teaching assistant. My job is mainly to organise academic and social events / activities related to the program.
I was sitting in a cafe in Kluuvi a few months ago, on a weekday afterwork, waiting for a friend. As I was looking around to see her, a joyful, smiling girl caught my eye, she was passing by the cafe, and I immediately recognised her: Jemima! She came to my table, quickly gave me a hug saying hello to me, the “chef”, continued with “keep up the good work” and then left. I had a huge smile on my face after this quick and happy encounter.
It is just a normal afternoon – there is some tea in the kettle, soon there will be even more fresh one, my aunt and uncle might stop by, I really want to have some cake.. And so I tell my mother: mum, could you pleaaaase bake your black tea cake??? Pleeease, pretty pretty pleaaase! And so she quickly bakes the most wonderful cake in the world!
I love using ingredients that are left from previous recipes and not needing to buy anything else from the shop. Somehow it makes me feel more, sort of, “accomplished”.
I am an avid tea drinker but I am not really a fan of green tea. Yet one day, I was again lost in the world of recipes on the internet, getting excited with many things to try, and then I saw this ingredient: green tea powder, which you can use to make cakes, cookies, pastries… That was it – I had to try green tea powder!
