As I am writing this blog post I am suffering from a bronchitis attack. Autumn comes and I get sick, that’s a usual story. This is why I chose a very easy recipe to cook and to write – even my fingers hurt while writing..
It’s official: Arctic char is a fantastic fish with absolutely delicious taste in any form of cooking. It is also one of the most stylish fish with the little pink polka dots on its skin.
Let’s see… It is clean, clear, cool, not too salty.. Well, I am talking about The Black Sea. The best sea that I ever swam in. But what’s even better is that it is home to the most delicious and special fish: European Anchovy aka Hamsi in Turkish.
As I was just learning how to properly and simply cook the Nordic fish in the oven, I decided to step up a bit further and try something bravely: what would happen if I put some salmon inside some pastry together with… mushrooms maybe? And which type of dough? which which hmm.. puff dough for sure.. Ok, I could do that.. And I could even find a friend that would be willing to taste it with me. So, I got into the business and I became intimate with salmon this time, with a very much hands-in experience!
I love the colour of this fish, arctic char, aka nieriä, both before and after cooking. It also really has a rather sweet taste, and it is such a delicious fish that no matter how you cook it, it will be extremely tasty.

Ever since I came to Finland, I’ve had all sorts of smoked fish – especially salmon of course. I usually bought them ready from Stockmannin Herkku or from Kauppahalli in Hakaniemi. But I had never ever actually cooked salmon myself. So, on Friday, I lost my virginity on that and cooked salmon for the first time in my life. I could not believe how easy it was! And oh my, baking the salmon in the oven does result in an extremely light and delicious way – I can go back to eating salmon now!
