Vegan Monday: A Cake Has No Name – But Has Coconut!
Vegan baking is not difficult. At all. And here is a good example.

These cookies are for those who love chocolate, who can’t get enough of chocolate, who can live on chocolate alone, who dream about chocolate at night.. so these cookies are for those who are like me!
Ok, lately I’ve been trying to bake healthier cakes (well, not always, but frequently!). This is such a trial. This loaf cake is only sweetened with honey and sweet potatoes, which also give colour and texture. The result is a sweet – but not “too sweet” – cake.
So, I associate ginger / ginger cake with winter mostly. That’s why I made it often in the past few months. Most of them were regular cakes but this one is gluten free!
When I was in Istanbul last month, I tried to find out the recipe for the one dessert I missed for many many years. This orange jelly dessert, that I remembered a bit differently, was one that my mother made all the time when I was a kid. It was one of my favourite dishes in the world. And then she stopped making it. It was forgotten. Until 2 weeks ago.
So, I’ve never been a fan of apple pies, really. But it goes back to my dislike for heavy pie doughs. That’s why when I made this pie, using phyllo sheets as the pie dough, I absolutely loved it – it is so so much lighter and crispier, and indeed flakier than other pies.
I believe that everyone has to have one simple, decent chocolate cake recipe at hand. This one is especially for those who prefer gluten free baking.
I would have loved to be writing right now how much I’ve been wining and dining but I am not that good at it for the past few years, I mean the wining part. That’s because my stomach is extremely fragile and has had many problems. So I’m very happy to find an alternative way to consume wine: baking a cake with it!
Autumn is full on with cool weather, falling yellow leaves, a bit of rain and a bit of sunny days altogether and days getting shorter. And so I continue flirting with pumpkin and in this post, our relationship is all about being a nice and delicious pie with a friend a bit unusual to tag along in pies: phyllo!
I have been planning to work on this recipe for I don’t know how long. I bought ricotta and cream cheese a few times in the past few months to work on it but I ended up using the ricotta for other recipes and ate the cream cheese! Finally, I did it!
