Let me give you a very easy and basic, lemony, buttery and very poppy cake recipe!

 

 

You see, making this cake is so so so easy: you just mix the ingredients! There is a massive amount of lemon related ingredients (lemon zest and lemon juice), which makes the cake very fresh and light, while poppy seeds add texture and colour!

 

 

 

I adapted this recipe from BBC Good Food. In the original recipe, there was self raising flour but I changed this recipe to normal flour and baking powder combination as it is not easy to find self raising flour in Finland. Also, in the original recipe, there was icing on top of the cake made with powdered sugar, however, I skipped this because I think it such icing turns this very light and lemony cake into a loaf of sugar. The cake itself is already very rich with lemon taste so there is no need for any addition.

Ingredients:

(makes 1 loaf, with 22x9cm loaf pan)

175 gr. butter, softened in room temperature
175 gr. granulated white sugar
200 gr. flour
2.5 tsp baking powder
zest of 4 lemons
juice of 2 lemons
3 eggs
2 tbsp poppy seeds
125 gr. plain yogurt

1. Preheat the oven to 180C. Grease your loaf or cake pan and/or put baking paper. Put aside.

 

2. In a mixing bowl, put butter and sugar and beat well until fluffy and creamy.

 

 

 

 

3. Add rest of the ingredients and beat just until combined.

 

 

 

4. Put the cake batter in the pan, smooth the surface using a spatula. Bake in medium rack of the oven, for about 45 minutes. Leave in the pan for 10 minutes after oven, before you let the cake cool completely outside the pan. Enjoy!
