Salad with raw zucchini, avocado, peas and apple – Refreshing Summer

Isn’t summer more colourful in everything? I tried to make another colour combination for this delicious and healthy summer salad for lunch.

I bought this one lovely plate for my food photos and I was looking for some nice colourful recipe to use the plate for the first time. Then I thought to myself: I will make a salad with lovely colours of summer as any simple summer day and that will be it!

So you can change some of the ingredients of this salad really, or you can just add more to what I have already, according to your wishes. You may wish to add more red for example and this would mean paprika or tomatoes, or you could go even greener and add more green salad etc. It’s up to you.

The salad dressing is also pretty simple — just some olive oil, lime juice and salt, with a little bit of thyme. You can also use fresh thyme, I just could not find it in the market that day!

Ok then, go on, while summer still continues, get a fresh salad for your lunch.

Ingredients:

(serves 2 people)

1 avocado
1 apple
6 slices of halloumi cheese (or more, if you like)
1/2 tsp / 2.5 ml olive oil (to fry halloumi)
100 gr. rucola
1/2 green zucchini, sliced in thin pieces
1/2 yellow zucchini, shaved
100 gr. fresh peas (or frozen, if you cannot get a hold of fresh ones)
1 lime (1/2 of it used for juice in dressing, 1/2 thinly sliced for final decoration)
1/2 tsp / 2.5 ml salt
1 tsp / 5 ml olive oil (to use in dressing)
1/2 tsp / 2.5 ml dried thyme (or fresh thyme as much as you like)

1. Chop avocado and apple into pieces as small as you like.

2. Fry halloumi with 1/2 tsp olive oil in a pan.

3. Arrange rucola, green and yellow zucchini, fresh peas, apple, avocado and halloumi in the way you like.

4. Add 1/2 lime juice, salt, olive oil and dried thyme.

5. Put one slice of lime on top for decoration and you’re done! Fresh, isn’t it?
