Basic Pancake – For Brunch

I admit: the first time I made this cake, it was because I loved how it looks!
A few weeks ago, in K-market in Kamppi, I saw a package of colourful carrots. They looked so much like the usual suspects. They were beautiful with different colours. I had to do something with them.
Isn’t summer more colourful in everything? I tried to make another colour combination for this delicious and healthy summer salad for lunch.
When I was living in Turkey where fig can grow and is rather cheap(er than here), I did not really like it. My mother had to force me to eat. When I am living in Finland where fig comes from either Turkey or from Brazil and it is really expensive, I started loving it. Quite idiotic, isn’t it?
This one is really easy. And it does not require very extraordinary ingredients either.
When a friend invited me to a picnic, I wanted to bake something easy, filling but light at the same time and something salty this time. So I baked this lovely zucchini pie since I cannot get enough of zucchini this year.
The first time I had that soup was at a school lunch in Ravintola Arabianranta. It was delicious and I was surprised to have such good food in that restaurant, which usually serves quite unidentifiable food.
I looked everywhere for this salad. I wanted to have a colourful salad made out of only raw ingredients. I would have a green and yellow salad with a touch of red. I had zucchini and tomato so I looked everywhere for summer squash. None. I guess summer squash is as late as summer in the North.
Ever since I baked Rachel Khoo’s savoury cake, I’ve been crazy about making other combinations. I realised that keeping the cake batter the same, you can make many different cakes just changing the other ingredients.
